Best practice (imo) is to just accept that the last little bit of whatever you’re slicing is not going to be finished up on the mandolin, thus not getting your fingers too close to the blade to begin with.
My mandoline is up there. Nice quick, even slices for veggie snacks! And I’ve only sliced off bits of my fingers… a few times.
