Like most any paid VPN service they need to track bandwidth usage somewhat. They can’t see what you’re accessing but they can see how much of whatever it is. Windscribe also offers a free 10gb/mo plan so they do track it for that purpose as well, much like any VPN with a free tier would.
CopWatch used to be pretty active and has apps for iOS and Android, but I see they haven’t been updated in a couple of years.
I’ve always liked Commento which can be self hosted, and you can set it up to be no sign-up/anon for users.

On Mac I’ve found Safari gets thru every time for some reason where chrome and Firefox do not. I might have the prevent IP tracking setting enabled or whatever but I never have to turn off my VPN (nor sign in) if the other browsers get flagged. Ymmv.

UBO and custom DNS works for me in FF. Sometimes I still get blocked so off to an Invidious instance I go (and they’re ad-free too) to watch whatever content I was trying to view.
ETA lots of people use DNS to proxy to Albania which yt doesn’t run ads for that region, they report it works fine but I haven’t tried it personally
